Blanched almonds are almonds that have had their skins removed through a process known as “blanching”. The blanching process involves briefly submerging the almonds in boiling water to loosen the skins, then immediately cooling them in cold water to stop the cooking process.The hot and cold treatment makes it easy to slip the skins off. Often preferred in cooking & baking as the subtle bittiness of the almond skins is avoided & thus does not taint the sweetness of the almond itself.
